Back to School with Caitríona Redmond

With the kids back in school (or college) and activities returning to normal, you might feel like you’re running around chasing your tail in a way like you haven’t in years. 

Work and home life, with everything else in between, is hard to balance but remember you’re not on your own. Every Sunday I take 10 minutes to take a look at the week ahead then plan my meals. This gives me loads of clarity, helps me collate my shopping list and save on the grocery bill. I can also figure out the days of the week where a batch cooked meal or a speedy supper would stop us dialling the takeaway or eating junk food. For example, Thursdays you might have music lessons followed by sports training. You will need to pack a box of snacks that will nourish both the body and the brain. Top Tips...

  • Plan your meals around your activities. If you know you have a busy day on a Monday between school runs/work/training then aim to have a pre cooked meal like a slow cooker casserole. 
  • Prepare your vegetables in batches by peeling and cooking double quantities. This will save you a lot of time on the second day. 
  • Did you know that chopped carrots, turnip, and peppers will keep well in sealed containers in your fridge for more than 2 days? Carrots and peppers cut into batons are brilliant, healthy snacks to eat on the go. 
  • When cooking a meal in the slow cooker, make double quantities so you can freeze half and reheat your meal on a day you’re short on time.
